Course contents
  • The course presents a repetition of and introduction to procedural methods in food technology.
    The major topics to be addressed are the processing, production and extraction of food and raw materials. Examples of general processes in the food industry (e.g. preservation and packaging technology) and raw material processing (e.g. extractive methods, catalytic methods and other processing methods) are discussed.
    Special attention is paid to which ingredients are used in the technical processing of raw materials into food, and why. The functions and origins of, as well as alternatives to these ingredients, are also analyzed.
