Course contents
  • The course focuses on a case study in the context of bioresource or food engineering (e.g. milk production according to the seasons or feeding, the sanitation of industrial effluent according to the seasons etc.). Examining this case study, students learn how to systematically determine, improve and assure quality and practically experience the methods introduced by the present course:
    - Planning and developing a product according to given parameters
    - Raw material control with correct sampling method
    - Preparation of an PDS and SOP for the produced product
    - Checking the parameters of the produced product (water activity, pH, microbiological status, colour measurement etc.)
    - Reclamation management according to case studies, working with ELISA for gluten detection, fast test kits for the detection of lactose and standard microbiological methods
